I have to agree. Where I was raised everyone lived on venison, but you used everything. Some times in hunting season one might run across a carcass with only the hindquarters missing. None of the locals liked that.

Someone south of Viola, in the Saddle Ridge/ Joyce Road area is trophy hunting. It is disgusting. I have only lived in this neighborhood for 5 years, so I have no idea how long they have been doing it, because it has happened every year that I have been here.
I have zero issue with people hunting game. People who kill male animals to cut off their antlers and leave the carcass to rot are below useless.
Trophy hunting is blatantly not sustainable. Why don't people understand that culling the world of the best specimens of the breed is weakening the gene pool of that breed?
Anyway, this year, it has not even been for an impressive rack, it was a young bull moose, with smaller antlers. The first bull moose I have seen from my house in a few years. The last one I saw was more mature, had a more impressive rack, and was also poached for his rack.
Typically, though, it is buck deer that are shot and left to rot. The head is never taken, only the rack. 
I hope your hideous coat rack or chandelier or what ever falls on you.
