Moscow Food Co-op Installs a Soup and Salad Bar 
  
Customers at the Moscow Food Co-op can now enjoy fresh salads from the new salad bar installed in June. The custom-made salad bar, located near the Co-op Deli, will offer a wide variety of local and organic produce, croutons, salad dressings, and other salad items for an introductory price of $7.49 per pound through the end of June. The regular salad price will be $7.99 per pound. Soups, desserts, and diced fruit will also be available. 
  
The 6-foot by 10-foot soup and salad bar, which cost $27,000 to purchase and install, arrived on June 15. The bar was manufactured in Buffalo, New York, after several weeks of delay. The bar cost as much as a car, $20,000, and at 1500 pounds it weighs as much as one, too. This was the most complex project the Co-op has attempted at its present location. 
  
Preparation for the bar included cutting a trench in the floor to update the utility lines and correct some settling that had occurred. Water and new electrical were added, along with the installation of a drain. A scale was added at the Deli cash register so salads, purchased by the pound, can be purchased at any register. A new service refrigerator was added so that salad bar fixings can be prepared and stored nearby. The cost of the preparations is a little over $7,000, some of which was paid for by generous contributions of members. 
  
In February 2009, $3000 was raised during the Salad Daze dinner to help pay for installation. Because of the Co-op's solid financial position no loans were needed to purchase the salad bar and the return on investment is expected to be 3 years. 
  
The Co-op is located at 121 East Fifth Street in downtown Moscow.
